Small Platter
I'm having a little get together for a committee. I want a little Buffett, how big a sausage do I need?

8 people total. And I want something hot in the crockpot, but no pepper. Ideas for something hot?

It depends. Is this supposed to be a meal? The time you can find out what you want. If you encounter after 1pm/7pm, you can usually assume that your guests will already have ate. If you get pre-made sandwiches or wraps, make sure that there are at least two varieties to choose and make sure they are sliced. As a previous meeting / conference planner, I noticed that when I told the caterer to decide on food and portioning smaller, we had less wasted food. I would like to plan for 7-8 people, but give them options. If this is a long meeting, order a tray of berries and cheese for Nibblers and plan for seven people. Soups are a good choice for a hot starter. They are filling and can be as fancy as your budget allows. You can get a lot of bang for your buck with soups. A soup of roasted red pepper is not expensive and takes less than a hours, but is so good. Meatballs or meatballs are also good. Buy barbecue sauce to jazz it up a bit with the brown sugar / pineapple juice / whiskey and taste like you spent a long time. The basic rule for appetizers is 4 to 6 per person for dinner and 8 to 10 for cocktails or lighter meals.
