Does anyone know a good recipe for nut roast turkey as a substitute for a vegetarian dish of Thanksgiving?

This a good Rose Elliot: Classic Roast A great vegetarian walnuts standby – easy enough to make midweek, impressive enough to serve to guests of dinner. This is a very nice roasted nuts, and not too difficult to do, especially as the mixture can be prepared in advance, leaving only the final cooking later. You can use almost all types of nuts for this recipe. I prefer buy a packet of chopped mixed nuts (much faster than chopping them myself), supplemented by larger pieces of Brazil or some nuts or cashews whole. I like to serve with roast potatoes and a green vegetable. The quantities given here will make four generous portions. * Oil for frying * 1 onion, chopped * 2 cloves garlic, chopped * 4 to 6 medium sliced mushrooms * 1 tbsp soup. all-purpose flour * 1 ¼ cup (10 oz, 300 ml) vegetable broth (or water) * 1 ½ cups (6 oz, 175 g) walnuts, finely chopped * 3 cups (6 oz, 175 g) bread crumbs * 1 c. soup. soy sauce ½ c. * Tea. dried herbs * Salt and pepper to taste * * Flour for coating Oil for roasting in the oven: Preheat to 375F, 190C. Stew the onion in oil for about five minutes or until tender. Add garlic and mushrooms. Cook for a few more minutes. Sprinkle flour on top. Stir well. Add broth or water, stirring all the time. Bring mixture to a boil and simmer gently for two or three minutes. Stir in walnuts, bread crumbs, soy sauce, herbs and seasoning. Put the mixture on a floured surface and form a loaf shape with your hands. Coat flour on all sides. Heat oil in a roasting pan. Place the bread in the tin. Bake for 30 – 40 minutes, basting from time time.
