How do you make gravy sauce for enchiladas?
It is a gravy sauce. I'm not criticizing mole, the sauce is different.
=) Enchilada sauce gravy * 1 cup vegetable oil 2 cups all-purpose flour * 1 / 4 cup chili powder * 1 tablespoon cumin powder * 1 tablespoon garlic * 1 1 / 2 tablespoons salt * 1 / 4 tablespoon pepper Directions * 2 quarts water to make Enchilada Gravy Sauce. Heat the oil in a large pot (at least 3 quarts). Add flour and cook until browned, stirring constantly, you make a roux, do not burn NOTE: This is almost a paste "consistency, do not be afraid when water is added, it will thin in a thick sauce. Stir in chili powder, cumin, garlic, salt and pepper. Cook roux, stirring constantly, for 2-3 minutes at least. If you do not do well Cook the roux it will taste like flour mixed with oil. Gradually add water, stirring until smooth. Boil gently for 15 minutes.
