Sometimes we are in a hurry or it's just too hot to cook. And sometimes, admittedly, we're simply too tired to cook. Do not fear sandwiches to the rescue. I do not speak of Bologna between two pieces of bread. I'm not talking tuna salad pita that give you tuna, vegetables, cheese and cereals in a single handle. The ham salad sandwiches, meat, eggs, and relish. Whatever alternately serve some fresh vegetables and / or fruit. You will not cheat your family, they will receive a decent meal.
TUNA SALAD PITA POCKETS
1 can (9 oz) of water, tuna, rinsed and drained, flaked
1 cup peeled cucumber
1 / 4 cup skim milk ricotta cheese party
2 v. tablespoons mayonnaise Reduced-fat
2 v. tablespoons red wine vinegar
2 v. tablespoons chopped green onion
1 tsp tablespoons sweet pickle relish
2 cloves garlic, finely chopped
1 / 2 c. Tea Salt
1 / 4 c. Tea freshly ground black
1 cup alfalfa sprouts
2 loaves of whole wheat pita, cut in half crosswise
In a medium bowl, combine tuna, cucumber, cheese, mayonnaise, vinegar, onion, relish, garlic, salt and pepper. Stir the mixture well. Divide alfalfa sprouts evenly between pita halves. Place tuna mixture also in the pita bread in half over the seeds.
Ingredients for 4 people to 209 calories, 22 g carbohydrate, 22 g protein per serving which makes it a perfect sandwich for diabetics that carbohydrates and proteins are equal.
Ham Salad SANDWICHES
1 lb. lean ham, finely chopped or minced
4 boiled eggs
1 / 2 cup fresh Pickle relish
1 1 / 2 cup low fat mayonnaise
Chop boiled eggs into small pieces and add the ham. Using a large rubber spatula type stir in relish. Add mayonnaise and mix well. Refrigerate until serving. Serve on bread or whole wheat bread, if desired.
Note: This is an excellent sandwich spread made with the Bologna instead of ham.
