The Spirit of soup (serves 6)
2 medium bulbs of garlic (about 16 nails cloves)
4 boxes of 14 oz of chicken broth reduced sodium
3 medium potatoes (about 1 pound), peeled and chopped ½ an inch.
3 carrots, peeled and chopped (1 ½ cups)
1 / 3 cup whipping cream
Salt and pepper to taste
Fresh chives, chopped for garnish (optional)
Directions:
Combine broth, cloves peeled garlic, potatoes and carrots in a saucepan, cover with water and bring to boil. Reduce heat and simmer for 20 to 25 minutes. Cool slightly, puree in blender or food processor until smooth. Return to saucepan to heat through the addition Whipped cream, salt and pepper and chives for garnish.
