SHOEPEG CORN CASSEROLE

2 cans (11 oz each maize) shoepeg, drained

1 can (10 3 / 4 oz) condensed cream of celery soup, undiluted

8 oz sour cream

1 cup shredded Cheddar cheese

1 / 2 cup chopped onion

1 / 2 cup chopped celery

1 / 4 cup chopped green pepper

3 / 4 cup butter-flavored ground hazelnuts

2 v. unsalted butter, melted

In a large bowl, combine the first seven ingredients. Spray a 2-liter casserole coated with vegetable oil. Mixture into the pan. Sprinkle with cracker crumbs and sprinkle with butter. Bake uncovered at 350 degrees for 20 to 25 minutes or until bubbly.

Serves 6.

ZUCCHINI CASSEROLE

4 medium zucchini, sliced

3 / carrots grated 4 cup

1 / 2 cup chopped onion

1 / 2 cup water

1 / 2 cup plain, unsweetened, low fat yogurt

Non-stick cooking spray vegetables

Preheat oven to 350 degrees.

Place zucchini in a medium saucepan, cover with water and cook 5 minutes or until tender and crisp. Drain in a colander and set aside. In another saucepan, combine carrots, onion and water. Cover and bring to a boil Reduce heat and simmer 5 to 10 minutes until tender and crispy. Drain liquid. Add zucchini and yogurt or carrot mixture onion in a saucepan and stir gently to mix. Spray a 1 1/2-quart casserole dish with cooking spray. Place zucchini mixture in the dish and bake for 30 to 40 minutes until heated through.

CABBAGE CASSEROLE

1 cup low-fat milk

1 / 4 cup egg substitute *

1 / 4 cup salt

1 cup shredded cabbage

1 / 4 cup grated cheese low fat American

Preheat oven to 400 degrees. Spray an ovenproof 1-qt non-stick cooking spray and set aside.

In a medium bowl, combine milk, egg substitute and salt. Stir to mix well. Stir in cabbage and cheese. Spoon into the prepared pan and bake for 30 minutes.

4 people: Each has 58 calories and 5 grams each of protein and carbohydrates.

* You may use 1 egg instead of egg substitute.
