MACARONI AND BEEF CASSEROLE WITH FETA CHEESE
12 oz pkg whole grain elbow macaroni
1 tsp tablespoons olive oil
1 med onion, peeled, finely chopped
1 / 4 c. Turmeric
1 / 4 c. ground Tea coriander
1 / 4 c. Tea pepper
1 lb. lean beef
2 v. tablespoon lemon juice
1 / 2 cup chopped parsley
1 cup crumbled feta cheese
2 v. tablespoons breadcrumbs
2 v. tablespoons grated Parmesan
Preheat oven to 400 degrees.
Cook macaroni according to package directions until they are tender. Drain. Heat the oil in a nonstick pan and cook onion over low heat until softened. Stir in spices. Crumble meat and cook until no longer pink. Add lemon juice. Remove from heat and stir in parsley. Spray a large baking dish with a nonstick cooking spray. Combine macaroni with meat mixture and half the feta cheese. Place the mixture into the mold prepared. Garnish with remaining feta cheese. Sprinkle the breadcrumbs and Parmesan on top. Bake 30 to 40 minutes until bubbly and hot through.
Six servings. Per serving: 371 calories, 28 g carbohydrate, 29 g protein
-ORANGE SALAD ALMOND
3 cups assorted salad greens
2 navel oranges, peeled and sectioned
1 / 2 celery, thinly sliced
2 v. tablespoons chopped green onion
1 / 4 cup vinegar cider
1 / 4 cup Splenda or sugar equal-Lite
2 v. tablespoon canola or olive oil
1 / 4 cup slivered almonds, toasted
In a large bowl, mix vegetables greens, oranges, celery and onion. Set aside. Blend vinegar, Splenda or Equal and oil in a small bowl. Using a whisk, mix whisk until smooth. Drizzle vinaigrette over the greens. Stir gently to coat. Put in individual bowls and sprinkle with almonds.
